Geographical origin, cultivation: The vines are located in the villages of Lugny and Azé, southern Burgundy, northern Mâconnais.
Average altitude: 240 m
Terroir: Clay-limestone with a gentle slope
Average age of the vines: 20 years
Area: 0.7 ha in the lieu-dit "En Rochebin"
Responsible agriculture: 1 Master word of the estate "being attentive to nature, observing before acting or intervening": limitation of treatments, only organic fertilization, soil work, bud thinning, and control of yields.
Harvest: Mechanical
Vinification
Pneumatic pressing, light settling at low temperature. Vinification in tank. The goal is to preserve the original purity of the fruit. Aging on fine lees until bottling. Racking, light filtration for bottling before the heat of summer.
Tasting
• Eye | Bright pale gold color with some golden reflections.
• Nose | It is quite intense, revealing notes of rose, grapefruit, and wax.
• Palate | The attack is tense, followed by a nice relief of fresh butter, with grapefruit notes. The finish is delicately toasted. Recommended serving temperature: 8-10 degrees.
